However, Ms. Ren would prefer to hear your story and let you decide whether she can cook worth a hill of beans. One more thing, Ms. Ren has a husband, “Mr. Doug”. Now that he has retired from a real job (haha) you will be seeing him more often also.

Ms. Ren’s Baked Oatmeal Recipe

This recipe serves four easily and may be doubled.

Make ahead and bake uncovered at 350° for 25
minutes in the morning.

Mix in a 2 cup measuring cup these wet ingredients:

1/3 cup vegetable oil
1/3 cup brown sugar
1 egg
½ teaspoon vanilla

Whip with fork until well blended.  Fill to the top of
the 2 cup measuring cup with milk and set aside.

Mix in a larger bowl these dry ingredients:

2½ cups Quaker Old Fashioned Oatmeal
¼ teaspoon salt
½ teaspoon baking powder
½ teaspoon cinnamon

Stir together with a fork and then add the following
ingredients to the dry ingredients:

1 coarsely chopped tart apple with skin (Rome, Granny
Smith, Gala or Empire)
½ cup dried fruit (cherries, raisins or craisins)
½ cup coarsely chopped unsalted nuts (pecans or walnuts
– not peanuts!)

Spray baking dish with Pam.  Pour wet two cups into
dry ingredients and then pour entire mixture into a glazed
baking dish. Cover and refrigerate at least 2 hours or
overnight.
